Caught on the East Coast of the USA to Canada in baited “pots”
Wonderful white, firm meaty texture, sweet, rich and full of flavour.
Keep rubber bands on. Keep cool (NOT on ice) and moist (under damp cloth/newspaper). Eat within 24-36 hours.
Cook in boiling water 10-12 minutes depending on size. Recommend cutting along the top of the tail to expose the meat. Serve with chips and salad, and lemon. Or classic mornay style, heating split tail under a grill with mornay sauce. Serve meat on fresh bread rolls with favourite sauce
