220g rice noodles
1 mango, peeled and thinly sliced
1/2 cucumber, thinly sliced
1 red onion, thinly sliced
2 cups mesclun salad
1/2 cup fresh mint leaves
1/2 cup fresh basil leaves
1/4 cup fresh coriander leaves
300g Regal Manuka Hot Smoked Salmon
1/4 cup Thai sweet chilli sauce
Zest and juice of 1 lime
1 tablespoon sesame oil
1 teaspoon fish sauce
1/2 teaspoon finely grated ginger
1 small clove garlic, minced
Bring a large pot of salted water to the boil. Add the noodles and cook for 2 minutes or until just cooked.
Drain and place in a bowl filled with cold water. This will stop the noodles from sticking together.
In a large bowl, combine mango, cucumber, red onion, salad greens and herbs.
In a small bow, combine all dressing ingredients. Pour half of the dressing over the salad and toss.
Drain noodles and divide between serving bowls. Top with salad and chunks of hot smoked salmon.
Serve with extra dressing and limes.
