Defrost overnight in refrigerator. Store chilled in ice or refrigerator (0-50C) until ready to serve. Consume within 2-3 days. Do not re-freeze.
Head is popular in sauces and soups because of rich flavour. Cook under the grill and salting to taste. Can be poached, sautéed, steamed. Excellent in paellas and robust stews.
