King salmon is native to Alaska but Ora King’s farms are in the South Island of NZ. The company’s breeding program is devoted to bringing out the best qualities of this salmon.
Unique marbled fat lines give a distinct buttery and soft texture. Attractive light pink colour, mild flavour.
Store chilled in ice or refrigerator (0-50C). Consume within 2-3 days. Do not freeze.
Check if any remaining bones, running finger along the middle of the fillet, and remove with pliers or tweezers. Roast, bake, broil, grill or pan-fry skin-side down after rubbing with a little olive oil and sprinkling with salt and pepper. Or poach or steam.
