Our King Mackerel is caught by small fishing boats in the Gulf of Thailand, which return to port each day. The fish is a long, slender and fast moving pelagic fish. The fishermen use a hand-line method to ensure the best quality King Mackerel.
Full, rich flavour, medium to high oiliness, a firm and moderately dry flesh and light pink to white colour. It has a thin edible skin with few scales.
Keep chilled in sealed bag in ice or refrigerator (0-50C). Note, This fish can spoil quickly, so store well and consume within 1-2 days. Do not freeze.
Suited to BBQ'ing, grilling or pan frying. Lightly salt on both sides. Coat grate or BBQ plate with oil. Grill on medium heat until bottom side is nicely seared. Turn over and cook the other side until the fillet is firm and cooked through to the middle.
