Living in the North Atlantic, close to shore during breeding seasons when females are targeted using gillnets primarily for their roe. Roe come in a range of colours but are typically dyed red or black for market.

Stored unopened in refrigerator chiller, preferably with crushed ice the roe can last up to 4 weeks. After opening can, store close to 0C and enjoy within 5 days. Recommend to cover surface of uneaten caviar with plastic, and reseal the lid. DO NOT FREEZE.
Lightly salted lumpfish roe can be used like caviar for various hors d'oeuvres or appetizers, and it can also be added to pasta sauces and spreads as well as dishes like omelets. And makes a lovely garnish.
